Elote (Mexican Street Corn)

My daughter and I went to a little Mexican celebration in the park a few weeks ago. It was fun, they had a DJ playing music on the outdoor stage, food stands, and a couple of craft booths and I tried Elote for the first time! 😍😍
It was so good, have you tried it?
I wanted to learn how to make it at home so my daughter came over and we made some, it was just as good as the corn we had at the park and so easy!
I'm sharing the recipe with you!
I just found it easier to go to a Hispanic grocery store (Fiesta Foods) to find the ingredients.
You don't need the Horchata to make the corn... I just love the stuff and you can't find it in most regular grocery stores!
You can cook the corn right in the husks in the microwave! Cook them for four minutes and then cut the bottoms off, grab them by the tops and give them a little shake. The husks will slide off and take all the silks with them!
Stick a wooden skewer into the bottom end of the corn as far as you can, like a corn dog. Coat with butter.
Grill the corn just long enough to get some grill marks on it.
Put a dollop of mayonnaise on the tin foil and roll the corn around in it to fully coat it, then roll it in the cotija cheese and sprinkle with tajin.
SO GOOD!!
