Keto Christmas Breakfast - Sheet Pan Pancakes
I can hardly believe it! This is the last day for the 2020 Festive Christmas Ideas blog hop! I had a lot of fun participating again this year, I hope you've enjoyed the hop too and you got some good ideas for this Christmas season.

Welcome back to year six of the Festive Christmas Event where I team up with a bunch of talented blogging friends to bring you a plethora of creative ways to celebrate your holiday season.We will be baking some cookie recipes for you, sharing some party games, making some handmade gifts, doing some ornament crafting, and sharing our Christmas movies family fun. There will be breakfast recipes and as always our decorated Christmas Trees which is always a fun tour of homes.
You will find new ideas every Monday and Wednesday between Oct. 19th through Nov. 18th.
Keto Christmas Breakfast - Sheet Pan Pancakes
Ingredients:
- 5 eggs, large
- 1 c. almond milk
- 6 tbsp. butter, melted
- 2 tsp. vanilla extract
- 3 c. almond flour
- 6 tbsp. Swerve sweetener
- 2 tbsp. coconut flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/3 c. sugar-free chocolate chips
- Spray an 11x17 cookie sheet (must have sides, not a flat cookie sheet with no sides) with cooking spray
- Line the cookie sheet with parchment paper and then spray that with cooking spray
- Add the eggs, almond milk, butter, and vanilla extract to a blender and blend just enough to combine
- Add the almond flour, Swerve, coconut flour, baking powder, and salt and blend again until it's really smooth
- Pour the batter into the pan and spread to the edges
- Sprinkle chocolate chips on top
- Bake 12 - 15 minutes at 400F (edges should be golden brown)
- Cut into 15 squares
- Butter & sugar-free syrup of course!
- Powdered Swerve sweetener
- Fresh berries (raspberries, blueberries, strawberries)
- Whipped cream
Serving size: 1 square, Net carbs: about 3 grams, Protein: 7.5 grams.
You just add all the wet ingredients to the blender and blend.
