Keto-friendly Christmas Sweet Treats

As you may know, I'm trying to eat Keto. I have been "trying" for probably about two years now. I don't think I've actually ever gotten myself into ketosis but I have lost about 18 pounds over the course of those two years so I'm happy with that!

Sometimes I fall off the Keto wagon, like when my boyfriend and I went on a little road trip over the weekend! It's just hard to stay Keto when you're eating out. To start off our trip we stopped at a local donut shop that makes BOMB maple bars, then we stopped at a Shari's for lunch and I had soup and a sandwich, for dinner we wanted sushi, and then the hotel gave us cookies 😳

It's ok though... I won't put that whole 18 bounds back on with just one bad weekend. I've learned that it's ok and I just start trying to eat Keto again the next day!

Why am I telling you all this? Well, because Christmas is coming... and with Christmas comes sweet treats!!

I'll probably fall off the Keto wagon again here and there but it will help if I have some Keto sweet treats to eat instead! I'm sharing two of my favorite Keto sweet treats (or fat bombs as they are called in Ketospeak!)

I have tried lots of Keto sweet treats and the two that are my favorite, that I make over and over are Keto Peanut Butter Balls and White Chocolate No-Bake Cookies 😋

Peanut Butter Balls

Keto-friendly Christmas sweet treats

Ingredients:
Optional Ingredients:
Recipe: 
  1. Combine all the ingredients in a medium-sized mixing bowl. 
  2. Once combined, use your hands to knead into a uniform dough.
  3. Roll about 24 balls from the dough and place onto a cookie sheet lined with parchment paper.
  4. Place the cookie sheet in the freezer for about 1/2 an hour to allow them to set up.
  5. Store in an air-tight container in the freezer, THESE are so cute!!
Optional ideas:
  • Use chunky peanut butter.
  • Roll them in cacao powder.
  • Roll them in powdered Swerve sweetener.
  • Add Keto-friendly chocolate chips.

Serving Size: 4 peanut butter balls, Net Carbs: 4 grams, Protein: 13 grams.

White Chocolate No-Bake Cookies

Even my daughter, who is NOT Keto and has a big sweet tooth, loves these!

Keto-friendly Christmas sweet treats

Ingredients:
  • 2 1/2 tbsp. coconut oil, at room temperature
  • 1/4 c. + 1 tbsp. cream cheese, at room temperature
  • 1/4 c. unsalted butter, at room temperature
  • 1/4 tsp. vanilla extract
  • 1/4 c. powdered Swerve sweetener
  • Pinch of salt
  • 1/2 c. shredded coconut, unsweetened
  • 3 tbsp. Keto-friends chocolate chips
  • Parchment paper
  • Cookie sheet
Optional ingredients:
  • Chopped pecans or walnuts
  • Mint extract
Recipe:
  1. Beat together coconut oil, cream cheese, butter, and vanilla in a large bowl until smooth.
  2. Add the sweetener and beat again until blended (taste test and add additional sweetener if desired).
  3. Add the coconut and chocolate chips and stir to combine.
  4. Drop by spoonfuls (approximately 12) onto a cookie sheet lined with parchment paper.
  5. Place the cookie sheet in the freezer for about an hour to allow them to set up.
  6. Store in an air-tight container in the freezer (THESE are cute too!!)
Optional Ideas:
  • Add chopped pecans or walnuts.
  • Add mint extract.

Serving size: 1 cookie, Net carbs: 1.2 grams, Protein 1.2 grams.
